1 lb. (½ kg) corn kernels
2 lb. (1 kg) sugar
15 fragrant prickly pears

Cook corn in unsalted water. Remove from heat, cool, and grind or blend.

Dissolve ground corn well in 6.3 pints (3 liters) of water. Strain through a cloth.

Add sugar and cook, stirring constantly to avoid sticking.

As mixture is thickening, dissolve prickly pears in half a liter of water and add to mixture.

Drain through a cloth and continue stirring until thickened (Put a drop of the nicuatole in a cup of water, if it floats, it is well-cooked).

Put in one large dish or several individual ones.

Remove from dish when cold, turn over so the shiny side is on top.
